2023 Grüner Veltliner

I sourced this beautifully balanced, varietally true grüner veltliner from Satori Springs vineyard, which is tucked into the northeastern part of the Willamette Valley. The grüner grows on the lowest section of the vineyard where we find Cornelius silt loam, a soil that the US Geological Survey describes as a “moderately well drained soils that formed in silty loess-like materials.”
The grapes were picked on September 21st, destemmed and crushed, and saw 20 hours of skin contact before pressing. Only the free-run juice was used for this bottling. After settling the full solids, the juice was racked into stainless steel, where it fermented with native yeasts and completed malolactic conversion spontaneously. After 6 months on fine lees, the wine was racked twice and sulfited with 66 ppm SO2.
This is the one wine I make that is lightly fined with bentonite clay… but as with all my wines, it’s bottled unfiltered.
